- 1 Lemon peel
- 100 g Cream
- 100 g Sugar
- 150 g Speculoos biscuits
- 250 g Cottage cheese
- 3 Eggs
- 300 g Fresh cheese type Philadelphia
- 50 g Butter
- Mix the cookies with the melted butter. Press the mixture to the bottom of a hinged pan lined with baking paper, pressing firmly with your hands. Place in a cool place.
- Preheat the oven to 130°C (th.4/5). In a bowl, mix the fresh cheese with the cottage cheese, cream and sugar. Stir in the whole eggs and grated lemon zest and mix well.
- Pour the mixture over the bottom of the dough and bake for about 50 minutes. Let cool and place in the refrigerator for at least 6 hours before serving.
